Alva

Alva (алва) is like eating really textured grainy jelly. I love it. I love semolina, the more soft wet pudding dishes and firm dishes like this or when it is used in biscuits. This is a easiest sweet my yaya makes and is one of my favourites. You can add almonds or walnuts and sultanas if you want. Its just one of those things I liked as a child and still love and I’m a really sucker for simple food – much like I am for peasant food.

Alva

24 serves

8 cups water

2 cups caster sugar

2 cinnamon sticks

 

1 cup oil

4 cups semolina

1 cup caster sugar

 

Heat the water, sugar and cinnamon.

Fry the oil, semolina and caster sugar until golden.

Remove the cinnamon sticks and add the boiled sugar syrup to the semolina, take off the heat and continue stirring.

When the mixture has thickened pour into a greased baking or muffin tin and turn out and cut when cooled.
