Stuffed Vegetables

Stuff these babies with whatever you want. They’re great for using up any vegies you have sitting in the fridge – just cut of their tops, remove the seeds or part of the flesh and stuff. You can add whatever vegies and herbs (fresh or dried) you want, then just add rice with a bit of stock and even some minced beef if you like. Some good vegies to stuff are capsicums, peppers, tomatoes, potatoes and zucchinis – it you want to do mushrooms make sure the rice is cooked completely through because it will not steam and cook like it will in the other vegies. For these ones I used in onion, garlic, celery, carrot, zucchini, mushrooms, canned tomatoes, parsley and oregano.
