20g unsalted butter
1/2 cup sugar
1/3 plain flour, sifted
1/4 cup passionfruit pulp
3/4 cup milk
2 eggs, separated
Preheat the oven to 180°C.
Beat the butter and sugar in a bowl until well combined.
Add the flour, passionfruit, milk and egg yolks and mix to combine.
Whisk the egg whites in a clean bowl until stiff peaks form.
Fold half the egg whites through the mixture with a large metal spoon, then fold in the remaining egg whites.
Pour into four greased 3/4 cup ovenproof dishes and bake for 12-15 minutes, or until the top is golden and puffed.
Top with passionfruit pulp and serve immediately as the puddings deflate quickly.
